Cucumber-Peach Farro Salad with Lime & Fresh Mint

Farro is a great foundation for a grain salad; it’s a bit chewy, yet tender enough to absorb flavors, especially the zippy lime vinaigrette in this recipe. It might seem a bit odd to include peaches in a vegetable salad, but their natural sweetness rounds out and balances the bold flavors of nutty pecans, cool mint and cucumber and tart lime zest. This is delicious when freshly made, but holds well overnight for make-ahead convenience - like for picnics, backyard potlucks, or even a brown-bag lunch at work.
